All tea originates from the exact same plant- Camellia Sinensis. It is the variety of tea plant and the processes involved that define the type of tea created. There are more than 500 tea varietals but the 2 main types are:
Camellia Sinensis Assamica: larger-leafed varietal of the tea plant that is typically used to produce black tea. Originating in the Assam district of India, it grows in warm, moist climates and is prolific of sub-tropical forests. The plants can grow to 30m, and live 30-50 years.
Camellia Sinensis Sinensis: smaller-leafed varietal native to China that is typically used to make green and white teas. It evolved as a shrub growing in sunny regions with drier, cooler climates. It thrives in mountainous regions because it has a high tolerance for cold. They can grow to be 6m and live 100 years.
